The crop is hand-harvested and the must is fermented using only the indigenous yeasts with no added sugar and no sulfur. The malolactic fermentation is thus allowed to take place and the wine is bottled unfiltered with no pumping whatsoever. Broader than most wines of the region, it shows the creamy texture or lactic quality that results from the malolactic fermentation. Quite focused with nice mineral notes and good acidity.
